Geoffroy has moved it’s cellars to Ay, but the majority of their vineyards are still in Valle de la Marne, resulting in a high proportion of Pinot Meunier dominating their blends. They don’t specifically adhere to Organic or Biodynamic farming, but they borrow practices for both to follow their minimum intervention principles. They trust their vines to show the very best of the soil without too much of a helping human hand. The wine has an interesting bouquet of apple sauce and vanilla and the creaminess of malolactic fermentation is avoided as much as possible. Perfect pairing for pastry, definitely a Champagne we recommend you start your day with (wink wink).
