Incredibly talented winemaker Davy is making waves with his organic approach in Cote des Bars in the South of Champagne. He worked in Burgundy most of his life and brought their approach to winemaking to his Champagnes. Even the fermentation of his wines is done in used Puligny-Montrachet barrels. Their winery is tiny, very different to most of Champagne and surrounded by vineyards and forests. Beautiful Champagne and a great way to start your journey on discovering the growers of Champagne.
